Chocolate covered strawberries are at their peak within a few hours of being dipped. The strawberry inside is a living piece of fruit, and it begins releasing moisture from the moment it is cut from the stem. Over time, this moisture works its way out through the chocolate coating, softening it from the inside. The texture and appearance both suffer as a result.
If you are making them at home, the recommended approach is to dip them on the day you intend to serve them. Store in the fridge once the chocolate has set, and serve within a few hours for the best result.
Making them more than 24 hours in advance significantly compromises quality. The chocolate will often look dull, feel soft, and the strawberry inside will have lost some of its firmness and flavour.
