How Do You Keep Chocolate Covered Strawberries from Sweating?

Sweating — or condensation — on chocolate covered strawberries is a common issue, particularly in warm climates like Dubai. It happens when cold strawberries are brought into a warmer environment, causing moisture to condense on the chocolate surface.

 

The good news is that it is largely a cosmetic issue rather than a quality one — the strawberries are still safe and good to eat. But it does affect the appearance and the texture of the coating, which matters when you are presenting them as a gift.

 

Here is how to minimise sweating:

 

Allow the strawberries to come to temperature gradually. Rather than taking them straight from the fridge to a warm room, let them acclimatise slowly. Taking the box out 10–15 minutes before serving, in a cool room rather than directly into heat, reduces the temperature differential and therefore reduces condensation.

 

Avoid placing them near heat sources. In Dubai this includes direct sunlight, near an oven, or in a warm part of the room. Find the coolest spot available for serving.

 

Do not cover them with cling wrap or a lid while they are warming up. Trapping the condensation makes it worse. Keep the box open or loosely covered.

 

Serve promptly once out of the fridge. The longer they sit at room temperature, the more moisture accumulates.
