Couverture chocolate has a higher cocoa butter content than standard chocolate, typically between 31% and 38%. This gives it a thinner, more fluid consistency when melted, which allows for a smoother, more even coating on the fruit. It also sets harder, glossier, and with more of that satisfying snap that defines a well-made chocolate covered strawberry.

 

Belgian chocolate specifically is prized for the quality of its cocoa beans, the precision of its manufacturing process, and the resulting depth of flavour. There are Belgian chocolate producers who have been refining their process for over a century — and the consistency and quality of the product reflects that.

Compound chocolate (using vegetable fats) is the practical choice for mass production and home baking because it does not require tempering. But the trade-off in flavour and texture is significant, and most people who have tasted both can tell the difference immediately.
